Jessica made these for Thanksgiving 2018. I am not a mushroom fan, but for those that are, this was a real hit.
List of Ingredients
10 cups Baby Bella mushrooms (about 2 lb.)
6 cloves garlic, chopped
6 stems fresh thyme, leaves only, chopped
1 stick melted butter
Kosher salt (pinch)
Cracked black pepper (several good grinds)
Lemon pepper (enough to coat the top, stir, then another coat)
Heat the oven to 400 degrees F.
Clean, destem, and quarter your mushrooms (or halved, if they’re small). Place in a baking dish (so that they’re tightly packed).
Drizzle with melted butter. Sprinkle salt, pepper, and a few shakes of lemon pepper. Toss to coat and sprinkle with more lemon pepper, the thyme, and the garlic.
Bake for 20 minutes, stirring halfway through to make sure everything is cooking evenly. Before pulling out, make sure every piece is cooked and coated.
Garnish with parsley or a sprig or two of fresh Thyme.
