    Jessica made this casserole for our church potluck and it was delicious and very popular. She successfully doubled the recipe and made it in a large disposable roasted pan.

    List of Ingredients




    30 oz bag of frozen hash browns
    2 cups of sour cream
    2 cups of cheddar (plus extra for sprinkling)
    1 cup of mozzarella
    Cornflakes, some crushed, some whole
    Stick of melted butter
    A few dashes of hot sauce (Frank's preferred)
    Salt and pepper
    Green onions, sliced (optional)

    Recipe



    Spray a 9x13-inch pan with cooking spray. Heat oven to 350F.

    Combine hash browns, sour cream, cheddar, mozzarella, hot sauce, salt and pepper (these last two to taste), and most of the green onions (if using). Put in a casserole dish, top with reserved cheddar, additional green onions, crushed and whole corn flakes. Drizzle melted butter over top. Bake in oven for 1hr-1 1/2 hrs. Cook longer if you're going to be serving immediately, otherwise cook for an hour so you can heat more later.

    Serves 12.
