Spinach w Onion, Bacon & Bleu Cheese

Mike made this for Mother's Day and served it with Hoisin & Cranberry Roasted Chicken. It is a very easy and really, really good sidedish! The bleu cheese melts with the heat of the spinach and makes a wonderful sauce. The magazine notes that regular spinach works better than baby spinach in this recipe. Mike used baby, because that is what the store had and, as long as you don't let it over-wilt, it works just fine.
List of Ingredients
2 teaspoons extra-virgin olive oil
1/2 cup thinly sliced red onion
2 cloves garlic, minced
1 10-ounce bag fresh spinach, tough stems removed
2 strips center-cut bacon, cooked and crumbled
1 tablespoon crumbled blue cheese
Recipe
Heat oil in a large nonstick skillet or Dutch oven over medium-high heat. Add onion and cook, stirring, translucent and beginning to brown. Add garlic and cook, stirring, until fragrant, about 30 seconds more. Add spinach and cook, stirring, until just wilted, about 2 minutes. Remove from heat; stir in bacon and sprinkle cheese on top. Serve immediately.
