Squash Souffle

My rendition of an unknown source recipe
Recipe Introduction
I don't eat squash (neither does my daughter - we call it 'squish'), but everyone who does loves this.
List of Ingredients
- 2 lb. yellow squash - sliced thin
- 2 medium onions - cut fine
- 1/2 stick butter
- 2 eggs - separated
- 1/4 c. fine cracker crumbs - Chicken in a Biscuit
- 1/2 c. cream
- salt and pepper to taste
- sugar
- a couple of gratings of nutmeg
- buttered crumbs
- paprika
Instructions
- Cook squash, onions and butter in a very small amount of water until tender and water is cooked out. Cream thoroughly. Add well beaten yolks, 1/4 c. crumbs, cream, nutmeg, salt, pepper and a small amount of sugar, to taste. Mix well. Folk in stiffly beaten egg whites. pour into a greased casserole and top with buttered crumbs. Sprinkle with paprika. Bake in 400 degree oven for 20 minutes.
