Sweet Potato Latkes with Brie & Arugula

This can be served as an appetizer or a vegetable side dish. It’s an absolutely delicious recipe that Jessica has served as a side dish for the past two Thanksgivings. I am not usually a fan of sweet potatoes unless they are sweet enough to serve as dessert. But I loved these. We all did. She came up with the idea to make a dressing for the arugula and it really adds something to this dish.

LATKES:
1 pound sweet potatoes, peeled and shredded
1/2 cup flour
1 teaspoon baking powder
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/4 teaspoon garlic powder
2 large eggs, lightly beaten
1/4 cup whole milk
Canola oil for frying
4 ounces brie cheese, cut into 16 slices
1/2 cup baby arugula leaves, approximately
DRESSING FOR ARUGULA:
5 T. Olive oil
2 1/2 T. Lemon juice + the zest of one lemon
2 t. Dijon mustard (or more, to taste)
1/2 t. Honey, to taste
Salt & Pepper – be conservative – you’ll be adding more of these later
A dash of hot sauce, optional

DRESSING FOR ARUGULA: Get this ready before you make the latkes. Mix all the ingredients in a jar and shake well or whisk in a bowl. Set aside.
LATKES:
Mix the sweet potato, flour, baking powder, salt pepper, garlic powder, eggs and milk in a large bowl.
Line a sheet pan with a double layer of paper towels. Heat about 1/4-inch of oil in a skillet over medium heat.
Drop 1/4 cup of the potato mixture into the hot oil and flatten slightly. You will have to work in batches. Fry until browned on both sides, flipping. This will take about 4 – 5 minutes per side. Drain on the prepared baking sheets. Preheat the broiler and continue to fry the latkes until you have used all the sweet potato mixture.
Slide the paper towels out from under the latkes and top each with a slice of Brie. Place the baking sheet under the broiler and broil until the cheese is slightly melted and bubbling around the edges (approximately 2 minutes).
Toss the arugula with the dressing and top the latkes with this.
Serves 12 – 16 as an appetizer portion or a side dish.
