    A really good cheese potato casserole. It was even better the next day! I think that you could use a lot of different cheeses with this – even a combination of them. We decided when we ate this that the next time we have it, we would add a little crumbled goat cheese and fresh thyme to the Swiss! I also added a little hot sauce, which I always do to anything cheesy and creamy.


    List of Ingredients


    • 1 (2 lb.) pkg. Frozen southern-style hash-brown potatoes
    • 8 oz. (2 c.) shredded Swiss cheese
    • ¼ c. butter
    • 3 T. flour
    • 3 c. milk
    • 1 t. salt
    • 1 t. onion powder
    • ½ t. white pepper
    • ½ t. nutmeg


    Instructions


    1. 1. Heat oven to 350 degrees. Spray a 13”x9” glass baking dish with nonstick cooking spray. In the baking dish, combine the potatoes and cheese; toss to mix.
    2. 1. Melt butter in large saucepan. Stir in flour to make a medium roux. Gradually add milk, stirring constantly. Add salt, onion powder, pepper and nutmeg; mix well. Cook and stir until mixture comes to a boil. Pour over potato mixture.
    3. Bake for 55 – 60 minutes or until mixture is set and top is lightly browned.

    Makes 12 servings.
