Swiss Potato Casserole

A really good cheese potato casserole. It was even better the next day! I think that you could use a lot of different cheeses with this – even a combination of them. We decided when we ate this that the next time we have it, we would add a little crumbled goat cheese and fresh thyme to the Swiss! I also added a little hot sauce, which I always do to anything cheesy and creamy.
List of Ingredients
- 1 (2 lb.) pkg. Frozen southern-style hash-brown potatoes
- 8 oz. (2 c.) shredded Swiss cheese
- ¼ c. butter
- 3 T. flour
- 3 c. milk
- 1 t. salt
- 1 t. onion powder
- ½ t. white pepper
- ½ t. nutmeg
Instructions
- 1. Heat oven to 350 degrees. Spray a 13”x9” glass baking dish with nonstick cooking spray. In the baking dish, combine the potatoes and cheese; toss to mix.
- 1. Melt butter in large saucepan. Stir in flour to make a medium roux. Gradually add milk, stirring constantly. Add salt, onion powder, pepper and nutmeg; mix well. Cook and stir until mixture comes to a boil. Pour over potato mixture.
- Bake for 55 – 60 minutes or until mixture is set and top is lightly browned.
