Ype’s Braised Red Cabbage

Recipe Introduction
We had this at a demonstration that Chef Ype gave at our local Silver Diner. Jessica has never cared for red cabbage and she loved this.
List of Ingredients
1 T. olive oil
2 lbs. red cabbage, sliced thin
1 Fuji apple, cut in 1/4-inch chunks
1/2 c. diced onion
1/2 c. champagne vinegar
1 T. ginger puree
1/2 c. brown sugar
1/2 t. cinnamon
1/2 T. sea salt
Recipe
In a large pot sauté the onions in a little oil over medium heat until translucent.
Increase the heat to medum-high and add the apples. Cook for 2-3 minutes. Add the cabbage to the pot.
In a small bowl, mix vinegar, ginger, sugar, cinnamon, and salt. Add to the cabbage and stir. Reduce the heat to medium and cook until crisp-tender – about 25 minutes.
Serves 8.
