Sweet Potatoe Casserole

List of Ingredients



• 5 cups cooked, mashed sweet potatoes OR
  
• 2 (40oz) cans of sweet potatoes, in light syrup-drained
  
• 1/2 cup butter, melted
  
• 1/3 cup milk
  
• 3/4 cup white sugar
  
• 1/2 tsp. vanilla extract
  
• 2 eggs, beaten
  
• Struesel Topping
  
• 1 cup light brown sugar
  
• 1/2 cup all-purpose flour
  
• 1/3 cup butter
  
• 1 cup chopped pecans
  






Instructions



1. Preheat oven to 350 degrees. Grease a 9x13 inch baking dish.
   
   
2. In a large bowl,mix together mashed sweet potatoes, 1/2 cup butter, milk, sugar, vanilla extract, and eggs.
   
   
3. I like to use my Kitchenaid mixer. I let it mix the ingredients while I make the Struesel Topping.
   
   
4. Spread the sweet potatoe mixture into the prepared baking dish.
   
   
5. In a small bowl, mix together brown sugar and flour. Cut in 1/3 cup of butter until mixture is crumbly, then stir in pecans.
   
   
6. Sprinkle Struesel topping over the sweet potatoe mixture.
   
   
7. Bake for 30-45 minutes in the preheated oven or unitl golden brown.
