    Bread:
    1 box yellow cake mix with pudding
    1 c. evaporated milk
    1 (8 oz.) can crushed pineapple with juice
    2 eggs
    1/2 tsp. nutmeg
    1/2 c. flaked coconut

    Glaze:
    1 1/2 c. sifted powdered sugar
    1-2 TBS. water or milk
    2 TBS. coconut, toasted



    Recipe



    Heat oven to 325°. Butter 2 8x4-in. loaf pans.
    For bread:
    In large bowl combine cake mix, milk, pineapple w/juice, eggs and nutmeg. Beat on low speed just until moistened. Beat on high speed for 2 minutes. Stir in coconut. Spoon batter into prepared pans. Bake for 45-50 minutes, oruntil golden brown and done.
    Cool on wire rack for 15 minutes. Remove from pans and cool completely.
    For glaze:
    Stir together powdered sugar and water until smooth. Drizzle over loaves. Sprinkle toasted coconut on top.
