    Rhubarb Coffee Cake

    1/2 c. butter or margarine, softened
    1 1/4 c. sugar
    1 egg
    1 c. buttermilk
    1 tsp. baking soda
    1 tsp. vanilla
    1/2 tsp. salt
    2 1/2 c. flour
    3 c. sliced rhubarb

    Mix all ingredients and pour into a greased 9x13-inch pan. Sprinkle over the batter a mixture of 1/2 c. light brown sugar and 1/2 c. chopped nuts. Bake at 350° for 45 minutes or until it tests done. Remove to wire rack and immediately pour hot topping over cake.

    Topping:
    1/2 c. butter or margarine
    1/2 c. sugar
    1/2 c. evaporated milk
    1 tsp. vanilla

    Combine all ingredients in small pan. Heat, stirring occasionally until sugar is dissolved. Mixture will be thin. Pour over hot baked cake.
