    Chicken filling:
    6 tbsp. butter
    1/4 c. chopped celery
    6 tbsp. flour
    2 1/2 c. chicken broth
    1 tsp. onion salt
    1/2 tsp. pepper
    1 tbsp. dried parsley
    3 c. cooked chicken

    Spoonbread topping:
    3 eggs
    1 c. self rising cornmeal mix
    2 c. boiling water
    1 c. buttermilk

    Recipe



    Melt butter in saucepan, saute celery in butter. Add flour and stir well. Add chicken broth and stir until mixture thickens. Add onion salt, pepper, and parsley; stir in chicken. Pour into 3 quart casserole and bake at 400* for 10 minutes. While casserole bakes, prepare spoon bread. Beat eggs, add cornmeal, boiling water, and buttermilk. Stir well after each ingredient and pour mixture on top of hot chicken mixture and return to oven at 400*. Continue to bake 30-40 minutes or until golden brown.
