    Zucchini Stuffing Casserole


    List of Ingredients


    • 4 medium zucchini, sliced 1/2 inch thick (1 3/4 to 2 lb.)
    • 6 Tablespoons butter (divided)
    • 3/4 cup shredded carrot
    • 1/2 cup chopped onion
    • 2 1/4 cups herb-seasoned stuffing cubes (divided)
    • 1 can Cream of Chicken or Cream of Mushroom soup, undiluted
    • 1/2 cup sour cream


    Instructions


    1. Cook zucchini in salted water until just tender; drain.

    2. Saute carrot and onion in 4 Tablespoons butter until tender.

    3. Stir in 1 1/2 cups of the stuffing cubes, soup and sour cream.

    4. Gently stir in zucchini.

    5. Spoon into 1 1/2 qt. greased casserole.

    6. Melt remaining 2 Tablespoons butter.

    7. Add remaining stuffing cubes to butter and toss gently; Sprinkle on top of casserole.

    8. Bake at 350 degrees for 30-40 minutes.
