    Stuffed Manicotti

    Time consuming, but so worth it!


    List of Ingredients


    • 1 (8 oz.) pkg. Manicotti, uncooked
    • SAUCE:
    • 3/4 Lb. lean ground beef
    • 1/2 cup chopped onion
    • 1 clove garlic; minced
    • 1 (28 oz.) can tomatoes; cut DO NOT DRAIN
    • 1 (6 oz.) can tomato paste
    • 1 tsp. salt
    • 1 tsp. parsley flakes
    • 1 tsp. basil leaves; crushed
    • 1 tsp. brown sugar
    • 1/2 to 1 tsp. oregano
    • 1/4 tsp. pepper
    • FILLING:
    • 1 (16 oz.) carton ricotta cheese
    • 1 egg; beaten
    • 2 cups shredded mozzarella cheese
    • 1 tsp. salt
    • 1 tsp. parsley flakes


    Instructions


    1. Prepare manicotti according to package directions; drain.
    2. For Sauce:
    3. In a large skillet, combine ground beef, onion and garlic. Cook until beef is browned; drain.
    4. Stir in tomatoes, tomato paste, salt, parsley flakes, basil, brown sugar, oregano and pepper.
    5. Simmer 15 to 20 minutes.
    6. For Filling:
    7. In a medium bowl, blend ricotta and egg. Stir in mozzarella, salt and parsley flakes.
    8. Pour one half the sauce into a 9x13" baking dish.
    9. Fill manicotti evenly with ricotta mixture and place in baking dish.
    10. Top with remaining sauce.
    11. Sprinkle with parmesan cheese.
    12. Cover and bake in a 350 degree oven until hot. (30 to 40 minutes).


    Final Comments


    Makes 8 servings.
