    1 lb. ground beef
    1 tsp. salt
    1 large onion, (chopped)
    1 tsp. fennel seed
    2 large cloves garlic, (crushed)
    1 tsp. dried basil leaves
    1 can (28 oz) whole tomatoes
    2 pkg. (10 oz each), frozen chopped spinach
    1 can (8oz) mushrooms, drained
    2 C. creamed cottage cheese, (small curds)
    1/4 C. snipped parsley
    1/3 C. grated Parmesian cheese
    1/4 C. ground nutmeg
    14 uncooked manicotti shells
    1/4 tsp. pepper
    2 Tbsp. grated Parmesan cheese
    bacon, (for meat sauce)

    Cook & stir ground beef, onion & garlic until beef is brown, about 10 minutes. Drain. Stir in tomatoes, ( with liquid), mushrooms, parsley, salt, fennel seed & basil. Break up tomatoes with fork. Heat to boiling, reduce heat. Cover & simmer beef mixture 10 minutes. Spoon about 1/3 of the beef mixture in ungreased rectangular baking dish, 13x9x2". Rinse spinach & squeeze until dry. Mix spinach, cottage cheese, 1/3 C. parmesan cheese, the nutmeg & pepper. Fill uncooked manicotti shells with spinach mixture, place shells on beef mixture in dish. Pour remaining beef mixture evenly over shells, covering shells completely, sprinkle with 2 Tbsp. Parmesan cheese. Cover & cook in 350 degree oven until shells are tender, about 1 1/2 hours. (Serves 7)
