    Buffalo Wings

    Recipe Introduction

    ~Special tools use: A deep fryer.~ You get all of the flavor you could expect when you eat these. The chicken stays crispy if you cook and serve in small increments. And they are soooooo simple!! Oh.. and don't forget the blue cheese dressing and celery sticks.

    List of Ingredients

    Wings:
    cooking oil for deep frying
    2 lbs. wings pieces
    1/2 cube real butter
    1 c. Frank's Hot Sauce
    optional: Tabasco, ground cayenne pepper
    Dressing:
    2 c. crumbled blue cheese
    1/4 c. cream
    1/4 c. sour cream
    1/4 c. real mayonnaise
    juice from 1/4-1/2 lemon

    Recipe

    BLUE CHEESE DRESSING:
    Combine all ingredients, mix well and refrigerate.

    WINGS;
    Whole wings are usually less expensive than pre-cut. Don't let cutting them intimidate you, simply cut through each joint which gives you a drumette and a piece with 2 bones to use for wings plus the tips for the freezer.
    Cut the wings, rinse and drain well on paper towels.

    1-Preheat oil to 400°
    2-Carefully drop wings in the hot oil one piece at a time (don't put so many you lose the heat). Stir a few times to prevent them from sticking together.
    3-Cook until very crispy (the time will vary according to your deep fryer and how many you put into the oil at a time). Figure 12-25 minutes.
    4-Drain well and place in the sauce. Make sure they all well covered with sauce. I like to put them into something that can take the heat and has a lid, add the sauce, cover and shake.
    Place them in a serving dish (I use a heavy bowl to help hold the stove heat.)
    Repeat the steps above until all the wings are cooked.

    SAUCE;
    Combine butter and hot sauce and bring to a boil. If you want them hotter, add Tabasco and/or cayenne pepper to taste. Turn off the heat and pour over the wings. Cover wings well with the sauce and serve.
