    Recipe Introduction


    Not HOT!! But full of flavor.
    Special Tools: deep fryer and a hand held strainer. I like to use a Chinese wire strainer with a bamboo handle.

    List of Ingredients




    oil for frying
    Fresh Jalapeno Peppers
    about 1 c. beer
    about 1 c. all purpose flour
    salt and pepper to taste
    your choice of cheese: cream, cheddar, jack or any cheese that will melt nicely inside the pepper.

    Recipe



    Wearing rubber gloves, slit the side of the Jalapeno and remove the seeds. If you want them hot, you can leave some of the seeds inside.
    Stuff each pepper with small slivers of cheese. Set aside.

    Preheat oil to 400°

    Combine beer, flour, salt and pepper. This should form a nice tempura type batter.
    Dip a stuffed pepper into the batter and gently place in the hot oil. Repeat being careful not to add too many at a time which would cool the oil.
    Once they start to float and are nicely browned, remove them to paper towels to drain well and cool just a bit.
    *****DO NOT eat immediately... you could bite into a pocket of hot oil and seriously burn your mouth.******
    You may want to serve these with Blue Cheese Dressing (see recipe under Buffalo Wings).
