    CINNAMON BREAD

    2 eggs
    ½ cup whipping cream
    1/3 cup vegetable oil
    ½ cup Splenda
    1 cup Dr Atkins Bake Mix
    2 tsp. baking powder
    1 tsp. baking soda
    1 tsp. ground cinnamon
    1 tsp. vanilla

    Recipe



    In a small bowl measure the bake mix, baking powder, baking soda, Splenda and cinnamon. Set aside. In a mixing bowl, beat the eggs with a mixer on high
    speed until light yellow in color, about 3 minutes. Add whipping cream, and beat 2 minutes more. Add oil. Add flour mixture to egg mixture, mix, and then add vanilla. Place in a greased loaf pan approx. 8" x 4." Press down
    so it is even. Bake at 350 degrees for 25 minutes. Each loaf has about 25 grams of carbohydrates.

    ANOTHER USE FOR THE CINNAMON BREAD:
    Slice the loaf of cinnamon bread into ½" slices and place them on a cookie sheet. Put into a 350 degree oven and toast until crisp but not burned, keep watching. Remove from oven and cool. Crush with a rolling pin, like graham
    cracker crumbs. Use these crumbs in your favorite graham cracker crust recipe. I add about ½ cup melted butter, about ¼ cup Splenda. Press into the bottom and sides of a 9" inch pie pan, and bake for about 4 minutes at
    375 degrees. Just until set. Cool and use with your favorite low carbohydrates pie filling
