    List of Ingredients




    1 tsp. butter
    About 1 cup of pork rinds, broken into small pieces but not crumbled
    4 eggs
    4 Tbsp heavy cream
    4 Tbsp water
    salt and pepper to taste
    1 cup cooked ham cut in very small cubes
    1 cup shredded cheese (cheddar, swiss, 4-cheese blend or whatever you like)

    Use butter to grease a pyrex loaf (bread) pan. Place pork rinds in the bottom.

    With hand mixer or hand blender, whip eggs until the yolks and whites are totally combined. Add cream, water and seasonings, and beat just until well-blended.
    Pour over pork rinds in loaf pan. Refrigerate at least two hours or overnight before proceeding with rest of recipe.

    Sprinkle ham evenly over top of casserole. Bake at 350 degrees F. for about 25 minutes until eggs are cooked through.

    Sprinkle cheese evenly over the top and return to oven for three to five minutes, just until cheese is melted.

    NOTE: This recipe lends itself to a lot of variations. For instance, you can add minced onion and/or lightly sauteed green pepper, herbs of your choice, or leftover vegetables and meats. The number of servings can be easily adjusted just by adding more of all the ingredients, using a
    larger baking pan, and adjusting the baking time.
