    CHOCOLATE MINT KISSES

    List of Ingredients




    30 grams dark unsweetened chocolate
    5 egg whites
    3/4 cup Splenda
    1 teaspoon vanilla extract
    1/4 teaspoon peppermint extract
    1 tablespoon unsweetened cocoa powder
    nonstick cooking spray

    Recipe



    Preheat oven to 150 degrees.
    Beat egg white, till soft peaks.
    Spray cookie sheets with nonstick spray, and sprinkle with cocoa powder.
    Melt the chocolate in the microwave, or in the top of a double boiler; let it cool.

    Beat egg whites until soft peaks form. Add the Splenda, a little at a time, and beat until stiff and shiny. Use a METAL spoon, and gently foldin the rest of the cocoa, the melted chocolate and the extracts, until completely combined.

    Drop onto cookie sheets in heaped teaspoonfuls about an inch apart.
    Bake for 40 minutes. Remove and place on rack to cool completely.

    Makes 40 cookies @ less than 1 gram of carbohydrate per cookie
