    1 lb. shrimp, shelled and deveined
    2 tbls. fresh lime juice
    2 tbls. butter
    1 jalapeno pepper, seeded and minced
    3 cloves garlic, minced
    1 tsp. cayenne pepper
    salt and pepper to taste
    1/4 c. tequila

    4 c. romaine lettuce sliced in ribbons
    1 avocado, pitted, peeled, and diced
    2 tbls. chopped fresh cilantro leaves

    Put shimp in a bowl and pour the lime juice over; mix well. In a wide nonstick skillet, melt the butter. When it foaming, add the minced pepper and garlic and cook for 2 minutes over medium heat. Add the shrimp and lime juice and the cayenne and cook about 4 more minutes or until the shrimp are pink and start to curl. Add salt and pepper to taste, then pour in the tequila (always remove pan from heat when pouring to prevent a "flash"). Cooke for aobut 3 minutes more until the liquid is reduced to a little sauce. Serve the shrimp on a bed of romaine ribbons, decorated with avocado and sprinkled with cilantro.
