Quick Freezer Jam
List of Ingredients
5 c mashed fruit*
1 c splenda**
3 tbsp Instant ClearJel
Recipe
Sift ClearJel and Splenda two or three times (the ClearJel will lump if it's not well-mixed). Mix with fruit, pour into containers and freeze.
*Use any fruit, fresh, frozen or canned, or any mixture. You may have to use a little more starch for juicy fruits.
** The original recipe called for two cups sugar, but one cup Splenda is plenty sweet with strawberries.
Using strawberries as fruit, and comparing ClearJel to cornstarch - 1 Tbsp. = .9 gr. carbs, .2 gr. fiber
