    I love good Swiss Steak and this is adapted from a resturant recipe which I have had for over 30 years.

    List of Ingredients




    2/3 c. flour
    salt & pepper to taste
    2 tbls. olive oil
    2 lb. round steak
    1 medium white onion, thinly sliced into rings
    1 medium green pepper, thinly sliced into rings
    1 fresh tomato, sliced (you may peel first if you prefer).
    2 small cans sliced mushrooms (stems & pieces work fine)
    6 oz. tomato sauce
    salt and pepper to taste

    Recipe



    1-Combine flour, salt and pepper in a dish.
    2-Cut steak into 6 equal serving size pieces and tenderize with a meat mallet.
    3-Dip meat into flour mix and set aside (I use wax paper for this step).
    4-Heat a skillet to about 370° add oil and the meat. Brown until a nice dark shade of brown.
    5-Place the meat into a baking pan which will allow all pieces without stacking.
    6-Combine tomatoe sauce and juice from mushrooms and set aside.
    7-Top each meat serving with a slice of onion, tomato, bell pepper.
    8-Carefully pour the tomato sauce mix over evenly over the entire pan.
    9-Scatter mushrooms evenly over the top. Cover and bake at 325° - 350° until very tender (1-2 hours).

    Remove from oven and allow to rest about 10 minutes before serving.
