Marvelous Meatballs
List of Ingredients
1 pound lean ground beef
1 egg
1/4 cup grated parmesan cheese
1/2 small onion finely chopped
chopped mushrooms
1/2 can Cream of Mushroom soup
4 tablespoons milk
4 tablespoons sour cream
1 tablespoon butter
dash of salt
Mix the ground beef, egg, parmesan cheese, finely chopped onion, and salt. Form into small meatballs and fry in frying pan. Remove from pan, drain on paper towel and pour out any remaining grease. Saute the remaining 1/2 onion and fresh mushrooms in butter. Mix 1/2 can of Cream of Mushroom soup and 4 tablespoons of milk (**you can use more or less milk and soup depending on how you like the consistency ~ just remember ~ the more the milk and soup, the more the carbs). Return the cooked meatballs to the pan and pour the mushroom soup mixture over meatballs. Heat on medium heat. Stir in 4 tablespoons sour cream, sauted onions and mushrooms, and mix.

~Notes from me~
**Serve to the rest of the family on a bed of noodles ~ they'll love it too! This is when you might want to use more milk and soup. When I make it for the whole family I use a whole can of Cream of Mushroom soup and about 1/2 can of milk. That way there is plenty of sauce to pour over the meatballs and the noodles for hubby and the kids. I eat ONLY the sauce that is coated on the meatballs and NOT the extra, and, of course, I don't eat the noodles, that way I eat less carbs and the entire family can enjoy it too.
**The onion and mushrooms are optional. If you don't like them ~ don't use them.
