Root Beer Wiggles

Serves 4
1/4 cup water
1 (1/4-ounce) envelope unflavored powdered gelatin
1-3/4 cups diet root beer
Cream or whipped cream (optional)Recipe
Pour the water into a small saucepan and sprinkle the gelatin over it, letting it sit 5 minutes or until no dry spots are visible. Heat the gelatin over low heat, stirring constantly, until it dissolves, about 3 minutes.
Remove the pan from the heat and add the root beer, mixing well. Pour the mixture into a 2-cup mold or souffle dish. Cover with plastic wrap and refrigerate 4 hours, or until set.
To serve, stir the gelatin a bit with the serving spoon to break it up, then scoop into clear glass dishes. Top with cream or whipped cream if desired.
