    Roast Asparagus

    Roast Asparagus is gorgeous to the taste buds.

    List of Ingredients

    serves 4-6
    1 1/2 lbs. fresh asperagus
    3 tbls. olive oil
    Kosher salt
    Fresh ground pepper
    Optional: chopped fresh thyme

    Recipe

    Preheat oven to 400 degrees.
    Prepare asparagus by washing off any sand and removing the tough area on the bottom of each stalk. (I save these to use in soup stock.)
    Dry asperagus and place on a cookie sheet. Sprinkle with oil followed by salt, and options of pepper and chopped thyme.
    Gently toss the asparagus to allow oil and seasonings to lightly coat surface of asparagus. Spread out into a single layer and place in oven for about 12-15 minutes until tender and tips are turning dark.
