    Chicken Broccoli and Wild Rice Soup

    This easy to make soup gets all the salt, and seasoning, it needs from the packaged rice mix. I do add some ground Black Pepper as well.

    List of Ingredients




    1 medium Onion, diced
    2 Tablespoons Olive Oil
    2 900ml cartons Chicken stock, low sodium
    3/4 cup Uncle Bens Chicken seasoned Long Grain and Wild Rice

    1 medium Carrot shredded
    1 large cooked Chicken Breast, cubed small
    1/2 tub soft cream cheese
    2 cups chopped Broccoli florettes, or more, if desired.

    2 Tablespoons Flour.
    1/2 cup cold water

    Shredded Cheddar and Mozza cheese, for garnish

    Recipe



    In a large pot, soften Onions in oil, on mediun heat. Add Chicken stock, Carrot shreds, and Rice. Bring up to a low boil, and cook until Rice is soft. Lower heat and add diced Chicken, and Cream Cheese, stirring often, to incorporate cheese. Thicken with flour and water, stirring often. Add Broccoli, and simmer 10-15 minutes, or until Broccoli is cooked. Season with ground Black Pepper.
    Ladle into bowls, and garnish with some shredded Cheddar and Mozzarella.
