Gouda and Red Onion Pizza

Makes 12 Appetizers; 3 Points each
List of Ingredients
2 Tbsp olive oil
1 large red onion, halved lengthwise and thinly sliced (2 cups)
1 Tbsp snipped fresh thyme or 1 tsp dried thyme, crushed
1/2 tsp salt
1/4 tsp. black pepper
1 Tbsp cornmeal
1 10- to 13.8 ounce package refrigerated pizza dough
8 ounces Gouda or Edam cheese, shredded (2 cups)
Recipe
In a large skillet, heat 1 tablespoon olive oil over medium heat. Add onion. Cook 5 to 7 minutes or until onion is tender, stirring often. Remove from heat. Stir in thyme, salt, and pepper.
Grease baking sheet, sprinkle with cornmeal. Pat pizza dough into a 12 x 8 inch rectangle on baking sheet. Brush dough with remaining tablespoon of olive oil. Sprinkle dough with cheese to within 1/2 inch of edges. Spoon onion mixture over cheese. (I might sneak in a thinly sliced layer of tomatoes before I add the onions.)
Bake pizza, uncovered, in a 400 degree oven for 12 to 15 minutes or until crust is golden. Cut into 12 pieces.
