    4 Servings; 3 Points per serving

    3/4 tsp. unsalted butter
    1/3 cup onion, chopped
    4 slices cooked bacon, crumbled (Core use Canadian bacon)
    5 ounces fat-free Swiss cheese, shredded
    2 eggs, beaten
    2/3 cup skim milk
    1/8 tsp. ground nutmeg

    Recipe



    Preheat oven to 400°F. Melt butter in a heavy nonstick skillet over medium-high heat. Sauté onion 5 minutes, or until tender. Transfer onion and next 3 ingredients to a bowl. Combine eggs, milk, and nutmeg in another bowl. Season with salt to taste and stir in onion mixture. Pour into baking dish and bake 25-35 minutes, or until center is set.
