1 � cup frozen corn, thawed
8 scallions, sliced
1 (15-ounce) can pinto beans, drained and rinsed
1/3 cup 50% light shredded cheddar cheese
� cup reduced-fat Bisquick
� cup whole milk
� cup chunky salsa
2 eggs
Salsa for garnish
Recipe
Heat oven to 400 degrees. Coat a 9-inch pie plate with nonstick cooking spray. Layer corn, scallions, and bean in pie plate. Sprinkle with cheese.
In a small bowl, mix baking mix, milk, the � cup salsa, and the eggs until blended. Pour into pie plate.
Bake 35 to 40 minutes or until knife inserted in center comes out clean. Cool 5 minutes. Slice into wedges and serve with extra salsa.
