8 oz. spinach noodles, dry
1 c. sliced onion
1/2 c chopped green pepper
1 Tbsp. vegetable oil
1 1/2 c low-fat cottage cheese
1/2 c plain nonfat yogurt
1 1/2 Tbsp Worcestershire sauce
1/4 tsp pepper
1/4 tsp garlic powder
1 c shredded part-skim mozzarella cheese
Recipe
Preheat oven to 400 degrees. Cook noodles according to package directions. Drain and set aside. In a small skillet, sauté onion and green pepper in oil until onion is tender and golden. In a large bowl, combine noodles, onion, pepper, cottage cheese, yogurt, Worcestershire sauce, pepper, garlic, and cheese. Toss to mix. Transfer to a 2-quart baking dish that has been sprayed with nonfat cooking spray. Cover and bake for 15 minutes. Remove cover and bake an additional 5 minutes.
Serving size: 1 1/2 cup. Makes 8 servings. 3 points per serving.
