    4 Servings; 7 Points per serving

    List of Ingredients




    - 2 tablespoons olive oil
    - 1 small onion, sliced
    - 1 red pepper, thinly sliced
    - 1/2 tablespoons grated fresh ginger
    - 1 cup broccoli florets
    - 1 pound tofu, drained and cubed
    - 1 cup cooked rotini pasta
    - 4 ounces Parmesan cheese

    Recipe



    Heat nonstick skillet or wok to medium high.
    Add oil and onion and stir-fry 2 minutes.
    Add pepper and stir-fry 1 minute more.
    Add ginger, broccoli, and tofu and stir-fry 2 minutes more.
    Add pasta and stir-fry until mixture is thoroughly heated.
    Top each serving with 2 ounces Parmesan cheese.
