    Fix-It and Forget-It Diabetic Cookbook

    8 Servings; 3 Points per serving

    List of Ingredients

    - 3 (10 ounces) boxes frozen spinach, thawed and drained
    - 2 cups low-fat (1%) cottage cheese
    - 1-1/2 cups grated fat-free Cheddar cheese
    - 3 eggs
    - 1/4 cup flour
    - 4 tablespoons (1/4 cup) light, soft tub margarine, melted


    Mix together all ingredients.
    Pour into slow cooker. Cook on HIGH 1 hour.
    Reduce heat to LOW and cook 4 more hours.
