Ginger Teriyaki Salmon

List of Ingredients
1/2 c. pineapple juice
2 Tbsp. brown sugar
3 Tbsp. soy sauce
1 Tbsp. fresh minced ginger (or 1 tsp. dry)
1 clove minced garlic
Recipe
Combine all ingredients and mix well. Allow fish to marinate for 5-10 minutes in the refrigerator before cooking.
Spray baking pan with non-stick spray and bake at 350 degrees for approx. 15 minutes or until the fish flakes part easily. Avoid over baking.
OR
Grill 10 minutes per side on a gas or charcoal frill.
OR
Use your George Foreman-type grill. Preheat grill, then cook salmon 10 minutes.

*If you like a stronger teriyaki flavor, try bringing the remaining marinade to a boil on the stove and whisk in 1 1/2 t. corn starch mixed with 2 t. water to thicken. Brush the thickened glaze on top of the salmon just before serving.
