    4 Servings ( 3/4 Cup ); 1 Point per serving

    List of Ingredients

    1 c. (one 8-ounce can) crushed pineapple, packed in fruit juice, drained, and 2 T. liquid reserved.
    3 c. shredded carrots
    2 t. coconut
    1 T. Sugar Substitute
    1/4 c. Kraft fat-free mayonnaise


    In a medium bowl, combine pineapple, carrots, coconut, and sugar substitute. In a small bowl, combine mayonnaise and reserved pineapple juice. Add mayonnaise mixture to pineapple mixture. Mix well to combine. Refrigerate for at least 30 minutes. Gently stir again just before serving.
