    Skillet Ham and Vegetables au Gratin

    Recipe Introduction

    6 Servings; 5 Points per serving

    List of Ingredients

    1 1/2 cups cut-up fully cooked ham
    1 large onion, chopped (1 cup)
    1 pkg. (5.25 oz.) au gratin potato mix
    2 1/2 cups hot water
    1/4 tsp. pepper
    1 bag (16 oz.) frozen broccoli, cauliflower and carrots, thawed
    1 cup shredded reduced-fat Cheddar cheese (4 oz.)

    Recipe

    Spray 10" nonstick skillet with cooking spray; heat over med.-high heat. Cook ham and onion in skillet for about 5 minutes, stirring frequently until onion is tender. Stir in potatoes and sauce mix from potato mix, the hot water and pepper. Heat to boiling; reduce heat. Cover and simmer 10 min. or until potatoes are tender. Sprinkle with cheese.
