Mexican Corn and Black Bean Soup

3 Servings ( 1 2/3 Cup ); 4 Points per serving
List of Ingredients
2T olive oil
2 cloves garlic
1/2 onion chopped
1t cumin
1/2t oregano
about 1-2t fresh chopped cilantro
1 c frozen corn kernels
1 can ff chicken broth
1 can black beans drained and rinsed
1 can diced tomatoes with green chiles, undrained
salt and pepper to taste
3 lime slices for garnish
Recipe
In a large saucepan, saute onions, garlic, cumin, oregano and cilantro in oil for 2 mins, or until onions are translucent and garlic fragrant. Add corn, and stir for another 2 mins. Add broth beans and tomatoes and bring to a boil. Reduce heat, and simmer 10 mins. Add salt and pepper and serve. Use 1 lime slice per bowl.
