    Pumpkin Roll


    List of Ingredients


    • 3 eggs
    • 1 cup sugar
    • 2/3 cup pumpkin
    • 1 tablespoon lemon juice
    • 3/4 cup flour
    • 1 teaspoon baking powder
    • 2 teaspoons cinnamon
    • 1 teaspoon ginger
    • 1/2 teaspoon nutmeg
    • 1/2 teaspoon salt
    • 1 cup nuts, finely chopped (optional)
    • FILLING:
    • 1 cup powdered sugar
    • 2 (3 oz) packages cream cheese
    • 4 tablespoons butter
    • 1/2 teaspoon vanilla


    Instructions


    1. Beat eggs on high speed for 5 minutes while adding sugar. Mix in pumpkin and lemon juice. Sift together, flour, baking powder, cinnamon, ginger, nutmeg and salt. Fold into pumpkin mixture.
    2. Spread into a greased 15-in. x 10-in. x 1-in. pan and top with nuts if desired. Bake at 375 degrees for 15 minutes.
    3. While hot turn out onto a dish towel. Start at narrow end and roll towel and cake and let it cool. While it is cooling mix together the filling mix.
    4. FOR FILLING: Combine powdered sugar, cream cheese, butter and vanilla; mix well.
    5. When cake is cool unroll and spread with the filling, roll up and chill.
