Bran Muffins
NOTE: For apple-bran muffins, just use plain bran cereal and add 1 cup chopped apples.
List of Ingredients
- 3 cups Raisin Bran or any bran cereal
- 1 cup boiling water
- 1/2 cup vegetable oil
- 2 eggs
- 2-1/2 cups flour
- 1-1/2 cups sugar
- 2-1/2 teaspoons baking soda
- 2 cups skim milk, mixed with the vinegar
- 1/2 teaspoon vinegar
Instructions
- In a large bowl, combine cereal and boiling water. Stir in shortening and eggs. Add remaining ingredients and blend well.
- Spoon batter into lined muffin tins, filling 2/3 full. Bake at 400 degrees for 18-22 minutes or until golden brown.
