    Pineapple Upside Down Cake

    Safeway Brand Flour

    List of Ingredients

    1 16-oz can sliced pineapple
    4 tablespoons butter or margarine
    2/3 cup brown sugar
    8 maraschino cherries, halved
    2/3 shortening
    1 cup granulated sugar
    2 eggs
    2 teaspoons vanilla
    2 cups Safeway Unbleached Flour
    2 1/2 teaspoons baking powder
    1/2 teaspoon salt

    Recipe

    Preheat oven to 350 degrees Fahrenheit

    Drain pineapple, reserving syrup.

    Melt butter in 9 x 9 pan add brown sugar and 2 tablespoons of the reserved pineapple syrup. Add water to the remaining syrup to make 1 cup.

    Arrange pineapple in bottom of pan. Place cherry half in center of each slice.

    Cream together shortening and sugar until smoothly blended. Add vanilla and eggs, one at a time and beat until fluffy.

    Sift together dry ingredients; add alternately with the 1 cup reserved pineapple syrup, beating after each addition.

    Spoon batter over pineapple.

    Bake at 350 degrees Fahranheit for 50 to 55 minutes.

    Cool 10 minutes; invert on plate.

    Serve warm.

    Whip cream on top (opitional)
