BLUEBERRY PANCAKES

1 c. all purpose flour
1/2 tsp baking powder
1/2 tsp.baking soda
1 c. skim milk or skim buttermilk
1 egg
1 tbsp oil
1 tsp.sugar
1/2 tsp. vanilla
1 pint washed and drained fresh blueberries
Recipe
In large bowl, mix dry ingredients. In another bowl mix milk, egg and oil. Pour liquid ingredients into dry ingredients and blend. Spray large nonstick skillet. When pan is ver hot, pour in enough batter to make 3 or 4 4in. pancakes and immediately add lots of blueberries to cower 80 to 90 percent of pancake. Cook till bubbling on batter stops. Add tsp. batter over berries and turn over, cookin for a few more minutes. Repeat till batter is used up. Serve immediately with syrup.
