    APPLE CAKE IN A JAR

    List of Ingredients

    2/3 cup shortening
    2 2/3 cup sugar
    4 eggs
    3 cups peeled, grated apples (Granny Smith)
    2/3 cup raisins
    2/3 cup water
    3 cups flour
    2 teaspoons baking soda
    1/2 teaspoon baking powder
    1 1/2 teaspoons salt
    1 teaspoon cinnamin
    1/2 teaspoon nutmeg
    2/3 cup chopped nuts
    8 pint-size wide-mouth canning jars with lids and rings

    Recipe

    Sterilize jars, lids and rings by boiling them for 10 min. remove jars to drain, air dry and cool. Leave lids and rings in hot water until ready to use. Grease inside of cooled jars generously with margarine.
    Preheat oven to 325 degrees. Place a cookie sheet onmiddle rack. Remove top rack.
    In a large bowl combine shortening, sugar and eggs. Add apples, raisins and water. In another bowl, sift together flour, baking soda, baking powder, salt, cinnamon and nutmeg. Add to apple mixture, mixing well. Add nuts.
    Fill jars half full with batter. Bake for 45 mins without lids. Remove jars one at a time. Wipe jar edge with moist paper towel. Seal jars with lids and screw rings down tightly. The jars will seal as they cool. To check on seal, push on lid, it should not move. To serve, slide cake out of jar and slice. Serve with whipped cream or vanilla ice cream.
