    List of Ingredients




    4 c Sweet potatoes; hot, cooked, -mashed
    1 1/2 c Sugar, brown; firmly packed
    1/8 ts Salt
    3/4 c Butter (or marg.)
    4 Eggs
    1 ts Vanilla extract
    13 oz Evaporated milk
    3 1/2 oz Coconut, flaked
    1 Pie shell; 10", unbaked

    Recipe



    Combine sweet potatoes, sugar, salt, and butter. Separate eggs and add yolks one at a time to potato mixture and beat well. Add vanilla, milk, and coconut and mix well. Beat egg whites until stiff and fold into potato mixture. Pour into unbaked pie shell. Bake at 400 degrees for 15 minutes. Reduce heat to 350 degrees and bake 30 minutes longer.
