PEANUT BUTTER SANDWICH COOKIES

Heat oven to 350 degrees. In bowl, whisk 1 1/2 cup all purpose flour, 3/4 tsp baking soda, and 1/4 tsp salt. In 2nd bowl, beat 1 stick unsalted butter, 1/2 cup creamy peanut butter, 1 cup sugar, and 1 egg until smooth. Beat
in flour mixture. For each cookie, roll 1 rounded tsp dough into 1 inch ball, place 2 inches apart on ungreased baking sheet. Bake 10 min. until puffed. Let stand 2 min. on sheet. Remove cookies, let cool. FILLING: In bowl, mix 3/4 cup peanut butter, and 1/4 cup confectioners sugar, spread flat side of half the cookies with 1 rounded tsp filling, top with remaining cookies. Refrigerate 30 min.
In 2nd bowl, microwave 1 cup semisweet chocolate chips and 4 tsp oil at 100% power, 1 min. stir until melted. Dip cookies halfway into chocolate, let excess drain off. Place on waxed paper lined sheets. Drizzle with remaining
chocolate. Refrigerate to set.*
