    DIABETIC CAJUN COUNTTY CHICKEN

    List of Ingredients

    2 tablespoons cornstarch
    1 teaspoon curry powder
    1/2 teaspoon dried thyme
    1 pound boneless skinless chicken breast -- cut into thin strips
    2 tablespoons vegetable oil
    1 medium sweet green pepper -- slivered
    1 medium onion -- sliced
    19 ounces stewed tomatoes -- (or 28 oz can)

    Recipe

    Combine cornstarch, curry powder and thyme; dredge chicken in mixture. Heat half of the oil in large skillet over medium-high heat. Sauté green pepper and onion for 3 minutes or until tender. Remove from pan. Add remaining oil to pan; sauté chicken for 2 minutes.
    Return vegetables to pan along with tomatoes. Bring to boil; simmer, uncovered, for 10 to 15 minutes or until slightly thickened and chicken is tender.
