Stuffed Onions
Stuffed Vidalia Onions
Ingredients:
6 medium Vidalia onions
1/4 cup melted butter
Salt and pepper to taste
1 pound spicy sausage
1 cored and diced apple
1 tsp. grated orange peel
2 Tbs. fresh chopped parsley
1/3 cup chopped pecans
3/4 cup grated sharp cheddar cheese
Preparation:
Peel off outer two layers from each onion. Cut off approximately 1 inch from stem and root end of
each onion. Scoop out the center of each onion with a sharp spoon, being careful not to cut all the
way through the bottom. Mince the centers and reserve approximately 2 cups for stuffing.
Place the whole onions in a shallow baking dish, and drizzle with butter, salt and pepper. Pour water
into the dish, about halfway up the onions. Cover the dish, and bake for 30 minutes in a 350-degree
oven until the onions are tender. Carefully remove the onions, drain and arrange on a buttered baking
sheet.
To make the stuffing, combine the minced, reserved onion, sausage and apple. Stir, and saut� over
medium-high heat, breaking up the sausage. Drain off any fat and toss the sausage mixture with
orange peel, parsley, pecans and 1/4 cup grated cheddar.
Spoon the stuffing into the center of each onion. Sprinkle with additional 1/2 cup cheese, and return
to the oven to melt the cheese (approximately five minutes). Serve with lemon-butter sauce.
