    I found this recipe in the Taste of Home I think in 2001. Darby made this for Thanksgiving 2003. It was very well received, right Dobes?


    List of Ingredients


    • 3/4 cup brown sugar-packed
    • 1/3 cup butter (no substitutes)
    • 3 Tblsp whipping cream
    • 3/4 cup chopped pecans
    • 1 2/3 cup sugar
    • 1 cup vegetable oil
    • 2 cups real pumpkin puree
    • 1/4 tsp vanilla
    • 2 cups flour
    • 2 tsp baking powder
    • 2 tsp pumpkin pie spice
    • 1 tsp baking soda
    • 1 tsp salt
    • 1 3/4 whipping cream
    • 1/4 cup confectioners sugar
    • 1 tsp salt


    Instructions


    1. In a heavy saucepan , combine brown sugar, butter and cream. Cook and stir over low heat until sugar is dissolved. Pour into 2 well greased 9" round baking pans. Sprinkle with pecans, cool.
    2. In a mixing bowl beat eggs, sugar and oil.
    3. Add pumpkin and vanilla.
    4. Combine dry ingredients, add to pumpkin mixture and beat just until blended. Carefully spoon over brown sugar mixture.
    5. Bake at 350 for 30-35 minutes or until toothpick comes clean.
    6. Cool for 5 minutes, remove from pans to wire rack to cool completely.
    7. Place one cake layer, praline side up on a serving plate.
    8. In a mixing bowl beat cream until soft peaks form. Beat in sugar and vanilla. Spread 2/3 over cake.
    9. Top with second cake layer, praline side up and remaining whipping cream.


    Final Comments


    I often leave the cakes in a single layer. Heat slightly in microwave if serving the next day. Can substitute cool whip if you want.
