Ingredients~~
1 small apple -- cored & peeled
½ cup sultanas
½ cup mixed peel
3 tablespoons glacè cherries -- chopped
½ cup currants
½ cup blanched almonds -- chopped
1 cup brown sugar -- firmly packed
½ teaspoon grated lemon rind
1½ tablespoons lemon juice
½ teaspoon grated orange rind
½ teaspoon cinnamon -- (we use 1 teaspoon!)
½ mixed spice
¼ teaspoon ground nutmeg
1½ ozs butter -- no substitutions
3 tablespoons brandy -- (we used brandy essence)
Method~~
Finely chop apple and half the sultanas.
Combine in a bowl with the remaining sultanas and rest of the ingredients.
Mix well.
Transfer to sterilised jars.
Store in refrigerator for at least 3 days prior to using to allow the flavours to 'marry'.
Makes about 2 cups fruit mince.
