Ingredients~~
1 small apple -- cored & peeled
� cup sultanas
� cup mixed peel
3 tablespoons glac� cherries -- chopped
� cup currants
� cup blanched almonds -- chopped
1 cup brown sugar -- firmly packed
� teaspoon grated lemon rind
1� tablespoons lemon juice
� teaspoon grated orange rind
� teaspoon cinnamon -- (we use 1 teaspoon!)
� mixed spice
� teaspoon ground nutmeg
1� ozs butter -- no substitutions
3 tablespoons brandy -- (we used brandy essence)
Method~~
Finely chop apple and half the sultanas.
Combine in a bowl with the remaining sultanas and rest of the ingredients.
Mix well.
Transfer to sterilised jars.
Store in refrigerator for at least 3 days prior to using to allow the flavours to 'marry'.
Makes about 2 cups fruit mince.
