Pink Rice
1/2 lb of bacon, cut into small pieces
1 large onion,chopped
1 small head of cabbage
2 cups uncooked rice(converted)
1 large can tomato juice
Fry bacon until almost crisp. Add onion and cook until clear. Meanwhile chop cabbage as for coleslaw. Cook for 3 minutes in boiling, salted water. I use a dutch oven. After 3 minutes add the uncooked rice. Cook together for 11 minutes. Drain. Add cabbage and rice mixture to the bacon and onions. You may cook on the stovetop from this point or put the whole mixture in a roaster to cook in the oven. Add 1/2 a can of the tomato juice. The rice will continue to cook as it absorbs the juice. Stir often, adding more juice as needed. Salt and Pepper to taste.
