Oatmeal - Buttermilk Pancakes

Recipe Introduction
These are Great "Stick To Your Ribs" Pancakes. The boys down at the Lodge can eat a lot of these. From the Complete Cooking Light cookbook
List of Ingredients
- 1 1/4 Cups Low-fat or non-fat buttermilk
- 1/2 cup quick cooking oats
- 1/2 teaspoon vanilla Extract
- 1 Tablespoon Vegetable Oil
- 1 large Egg -- Lightly Beaten
- 1 1/4 Cups All- Purpose Four
- 2 Tablespoons Brown Sugar
- 1/2 teaspoon Baking Soda
- 1/2 teaspoon Salt
Instructions
- Combine Buttermilk, Oats, & Vanilla; Let stand 10 minutes, stirring occasionally.
- Stir in Oil & Egg.
- Lightly Spoon Flour into Dry measuring cups; level with a knife.
- Combine flour, brown sugar, baking soda, and salt in a large bowl.
- Add Oat mixture to Flour mixture, stirring until smooth.
- Stir about 1/3 cup batter onto a hot non-stick skillet.
- Turn Pancakes when tops are covered with bubbles and edges looked cooked.

These can be used while camping too. What can be done is to combine all the dry ingredients in a large "Baggie," (I like to do that for a double batch,) and then later just empty the dry ingredients in a bowl and add the wet ingredients. You save time and hassle, and you're ready to fry up those cakes in short order.
