    List of Ingredients




    4 Egg Whites
    1 teaspoon Cream Of Tartar
    1 Cup Cane Sugar
    Crisco - Do not use butter to grease the pan

    Filling Ingredients
    4 Egg Yolks
    1/2 Cup Sugar
    1 Lemon -- Juice & zest the Lemon
    1/2 Pint Whipping Cream

    Recipe




    Beat the 4 Egg whiltes until frothy. Add 1 Teaspoon of Cream of Tartar, beat until stiff

    Add 1 Cup of Sugar gradually & continue beating 10 minutes.

    Grease Pie Tin well with Crisco - Do not use butter.

    Pour and spread Merangue mixture into pie tin and bake for one [1] hour at 300°

    Allow to cool slowly in pan.

    Filling Directions

    Beat 4 egg yolks until lemon colored & thick.

    Gradually beat in 1/2 cup Sugar & Lemon Juice, & Lemon Rind [zest] of 1 Lemon

    Cook until thick - then cool

    Beat 1/2 Pint Whipping Cream, Spread half of Whipped Cream on Merangue

    Then spread Lemon filling on & the remainder of Whipped Cream

    Chill over night in refrigerator
